Chosen Solution

I recently upgraded my iMac’s storage from original 1 Tb HDD to Intel PCIe SSD using an adapter. Meanwhile, I totally removed the original HDD (and SATA cables) and only keep the intel PCIe SSD as the sole hard drive. New OS Catalina installed on this ssd as well. It works so far so good. I did not notice any unusual fan spinning either. I am wondering if this is safe to keep only one PCIe SSD and remove the original HDD completely? I know if you connect an SSD to the regional data cable, you also need a thermal sensor to prevent the fans spinning too fast. Is my solution (I,e, sole PCIe SSD) feasible for the long run? There is no reason to remove the original SATA HDD drive this system had just because you installed a blade SSD. Your system can support two drives. The only issue you can face is not selecting the correct drive as being your boot drive. Use the Startup Disk preference to select your blade SSD.
